Class 6 – Flaky Biscuits / Strawberry Shortcake / Orange Cranberry Scones
1. Instructor demonstrates making biscuit dough using food processor with
volunteer students participating, must rest in cooler
2. Instructor demonstrates making scone dough using hand method with volunteer
students participating, must rest in cooler
3. Instructor demonstrates slicing strawberries and marinating with volunteer
students participating (to be utilized for strawberry shortcake)
4. Instructor demonstrates making vanilla whipped cream with volunteer students
participating (to be utilized for strawberry shortcake)
5. Instructor demonstrates rolling biscuit dough and cutting with volunteer students
participating (to be utilized for Strawberry Shortcake)
6. Instructor demonstrates rolling scone dough and cutting, students will garnish
scones with sanding sugar the instructor will bake
7. Instructor demonstrates assembling Strawberry Shortcake including piping
whipped cream, students prepare their own
8. Class to enjoy prepared food and participate in kitchen cleanup

About the Chef
A graduate of The Culinary Institute of America Eric has worked in many areas of the hospitality industry including hotels, catering, private schools, and culinary education. He is a ServSafe certified Food Protection Manager and a certified Foodservice Management Professional through the National Restaurant Association.
